 1 medium sweet potato - peeled and cubed
 1 onions- diced
 2 cans chick peas- drained and rinsed
 2 tbsp lemon juice
 2 cloves of garlic
 1/2 tsp cayenne pepper
 Salt & pepper to taste

Cook the sweet potato:
Bring a pot of water to a boil. Add the cubed sweet potatoes and cook until fork-tender. Drain well.

Sauté the onions:
In a pan, heat a drizzle of oil and sauté the onion until golden and caramelized. Add the cooked sweet potatoes and sauté together for about 10 minutes.

Blend:
Transfer the sautéed onion and sweet potato mixture to a food processor. Add the remaining ingredients. With the processor running, slowly drizzle in olive oil until you reach a smooth, creamy consistency.
