
Prepare the meat mixture:
In a large bowl, combine all of the meatball ingredients and mix until fully incorporated.
Slice the potatoes:
Rinse the potatoes and slice them thinly (a mandoline works best for even slices).
In a round baking dish, arrange the ingredients in a tight spiral pattern:
Place one slice of potato.
Form a small meatball and place it directly in front of the potato slice.
Continue alternating potato and meatball, working in a circular spiral until the dish is filled and all the meat mixture is used.
In a separate bowl, whisk together all of the sauce ingredients. Gently pour the sauce evenly over the assembled dish.
Cover tightly with wet parchment paper, then foil. Bake at 400°F for 40 minutes.
Remove the foil and parchment and bake for an additional 20 minutes, until golden and cooked through.
Tip:
You can place two potato slices between each meatball for extra layering. You can also alternate between regular potatoes and sweet potatoes for added flavor and color.
