6 frozen cubes of garlic
4 cans diced tomatoes
1 green pepper, diced
Cayenne pepper and salt
Oil

1 large eggplant
5-6 cloves of garlic
Mayo
Lemon juice
salt and pepper to taste

In a large pot, add some oil, garlic and cans of tomatoes. Let it come to a boil. Add diced pepper, lower to a simmer and let cook for 3 hours. Add your spices and let continue to cook on low till the liquid is evaporated and you have a delicious looking matbucha. I add a little oil a few times during the cooking process.
Season more to taste!

Make holes with a knife in your eggplant.
Stiff holes with whole garlic cloves
Roast at 400 for 35-40 mins. Till soft
Cut in half, scoop out the inside and add to bowl. Add a little mayo (1/4 cup) salt and pepper. Give it a jooze till smooth.
