
3 lbs beef chuck roast
2 tbsp miso
1/3 cup soy sauce
1/3 cup orange juice
2 tbsp pure maple syrup (or honey)
3 cloves garlic, minced
1 onion, sliced

Preheat oven to 325°F.

Combine miso, maple syrup, garlic, soy sauce, OJ and salt in a small bowl and whisk well to combine.

In a pan, Sear the meat 2–3 minutes per side on medium-high until deeply browned

On the bottom of your roasting dish add the onions, then the meat and pour sauce over. Cover and roast for 3- 3.5 hours, remove from the oven and check if the meat pulls apart easily, shred into large chunks and toss in juices. If not cook for longer till it falls apart easily.

Serve with mashed potatoes or however you like your pulled beef
