 2 lbs dark chicken cutlets
 1 large onion, thinly sliced
 ½ cup BBQ sauce
 ⅓ cup pure maple syrup
 ¼ cup orange juice
 2 tbsp bourbon
 Salt to taste
Maple Chicken

Preheat oven to 350°F

Add sliced onions to a 9×13 baking dish

Place chicken on top of onions

Add BBQ sauce, maple syrup, orange juice, bourbon, and salt

Mix gently to coat chicken

Cover tightly with foil

Bake for 1½ hours

Remove some of the sauce and transfer to a small saucepan for later

Let chicken cool slightly, then shred

Heat a frying pan with a little oil
Add chopped facon and sauté until crispy
Drizzle with maple syrup and let caramelize
Remove from heat and set aside

Sauce

Bring reserved sauce to a boil
Simmer until thickened
Set aside for drizzling
