1 cup Lotus Biscoff spread
½ cup Earth Balance butter, melted
2 eggs
8 Lotus Biscoff cookies, crushed

Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large bowl, mix together the cake mix, Biscoff spread, melted butter, and eggs until fully combined and smooth.
Fold in the crushed cookies and white chocolate chips by hand until evenly distributed.

Scoop portions of dough onto the prepared baking sheet, spacing slightly apart.
Bake for 9–11 minutes, just until the cookies are set. Do not overbake—they will continue to firm up as they cool.

Let the cookies cool completely on the baking sheet to help them set and stay soft.
Drizzle with extra Biscoff spread before serving for an extra boost of cookie butter flavor.
