 1 ½ cups flour
 ½ cup cocoa powder

 ¼ cup brewed coffee or espresso (cooled)

Preheat your oven to 350°F. Line a 12-cup muffin tin with liners.

In a large bowl, whisk together the eggs, oil, milk, coffee, and vanilla until smooth.

Add the dry ingredients to the bowl and gently mix just until combined. Do not overmix.

Fold in the chocolate chips until evenly distributed.

Divide the batter evenly between the 12 muffin cups, filling each most of the way full. Sprinkle additional chocolate chips on top for bakery-style muffins.

Bake for 18–20 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
