 ½ cup almond milk
 ½ cup avocado oil
 1 cup cranberry sauce
 ½ cup brown sugar
 1 large egg
 Zest of 1 orange- Optional but recommend
 1 tsp vanilla extract
 1 ½ cups all-purpose flour
 1 cup quick oats
 1 tsp baking powder
 1 tsp baking soda
 ½ tsp salt
 ½ tsp cinnamon

Makes 12 muffins.

Preheat oven to 350°F. Line muffin tin with liners.

In a bowl add almond milk, oil, cranberry sauce, sugar, egg, and orange zest. Whisk until combined. Add flour, oats, baking powder, baking soda, salt, and cinnamon. Mix until combined. Don’t over mix.

Fill muffin cups almost to the top.

Bake for 15–18 minutes, until a toothpick comes out with moist crumbs

Cool in pan 5 minutes, then transfer to wire rack.
