
1/2 cup olive oil
2 cups chocolate chips
5 eggs
1 cup sugar
1 cup flour
1 tbsp espresso coffee diluted in some water- optional but recommend
High quality chocolate bar ( 16 pieces)

Preheat oven to 375°F. Set out ramekins or large disposable baking cups on a baking sheet

Melt the chocolate chips with the oil until smooth. Set aside to cool slightly.

In a large bowl, whisk together the eggs and sugar until well combined. Whisk in the melted chocolate and coffee until smooth.

Add the flour and gently fold just until no streaks remain (don’t overmix).

Divide the batter between the ramekins/cups. Press one piece of chocolate into the center of each one.

Bake for 10–12 minutes, until the edges look set but the center is still soft.

Serve warm (reheat briefly if needed) with a scoop of vanilla ice cream.
